Twice Baked Potatoes

I thought for my first post I would share a recipe that I have always gotten many compliments on! Twice Baked Potatoes.  My husband could eat these everyday if he could!




I made this for just the 3 of us. I used smaller potatoes. You can adjust the recipe for more or less. I don't even have to measure mine anymore. I can tell by the consistency that it is just right.


Ingredients 

5 medium potatoes
1/2 cup sour cream
1/2 cup of milk
3 tablespoons of butter/margarine-- softened
Shredded Cheese-- as much or as little as you want. Save about 3/4 of a cup for topping.
Salt and Pepper

Pre-heat oven to 350°


So your first step is going to be cooking the potatoes the first time.  I cook mine in the microwave, its so much faster than the oven.

Take a fork or knife and poke the potato several times



These took around 8 minutes to cook. If you poke your fork/knife into the fork and the inside of the potato is soft then you know its done!



Now, if you have little ones that like to help in the kitchen the next step is great for them! Grating the cheese. You can buy pre-shredded cheese, but I bought a block of cheese and let my daughter help grate it!

Once your potatoes are cooked and cooled down a little bit you are going to cut them. If you are using large potatoes cut them in half. I used medium potatoes so I just cut the tops off of mine. After you cut them scoop out the inside as much as you can. This part can be tricky, the skin needs to stay intact- leave a thin layer of the potato so they don't fall apart. They definitely don't have to be perfect. Scoop the inside of the potato into a large bowl.




Mix together the potato you just scooped out, the sour cream, milk, butter/margarine salt and pepper, and cheese (make sure to leave some cheese for the topping). You can mix this with a spoon or fork but  a potato masher works the best. You can add more of the ingredients if you choose-- just not too much milk. Also, some people make theirs with bacon bits, add those in this mixture too!


Time to add the mixture back to the potato skins. This step is much easier than scooping the actual potato out. 



Cover them with cheese!


Bake at 350° for 15-20 minutes

We had Peppercorn Pork Tenderloin and Broccoli with ours! It was delicious!
